Roasted Prawns with Tomato and Basil Vinegar
This is quick and delicious. If time is short you can cook the oil, garlic and oregano in a heavy based pan over a low heat, while you peel the prawns.
3 tbsp olive oil
4 sprigs oregano
2 garlic cloves, halved or crushed
18 large prawns, peeled
2 tbsp Tomato and Basil Vinegar
Salt and pepper to taste
Serves 6 as a starter or 2 as a main
Pre-heat the oven to 450F/ 230C
Pour the oil onto a baking sheet. Spread the oregano and garlic evenly across it.
Place the baking sheet in the oven for 20 minutes.
Add the prawns to the hot oil and herbs. Return to the oven and roast until pink, tossing 2 or 3 times.
Remove from the oven and toss with vinegar, season and serve on a bed of salad leaves.
