Chicken with Sémillon Apricot Vinegar

Hurray! We are now selling Moulin des Cépages Vinegars. So I am starting to try out some of their recipes. We really loved this quick and excellent chicken served with apricot couscous.

You need:

For the Chicken Tajine:

6 chicken legs
2 dsp dijon mustard or similar
7cl Semillon Apricot Vinegar
1 dsp tomato paste
15cl single cream
7cl water
Pepper and wine salt

For the Apricot Couscous:

400g couscous
500cl water
2 tbsp pistachio oil
8 dried apricots, chopped
1 onion, finely chopped
A knob of butter
1 tbsp wine salt
2 teasp smoked paprika
1 tsp cayenne pepper
100g pistachios, chopped
Fresh coriander

Steps:

For the Chicken Tajine:

Put the chicken legs into a casserole dish (with lid).

Put all the other ingredients in a bowl and mix.

Pour the mixture over the chicken legs and mix.

Cover and cook for 1 hour in a moderate oven.

For the Apricot Couscous:

Fry the onion and the apricots in the butter.

Add the boiling water to the couscous and mix.

Add the pistachio oil and mix.

Then add the paprika, cayenne, apricots, onions and salt.

Leave for 5 mins, stirring occasionally.

Before serving add the pistachios and coriander.
